July Dish of the Month Recipe
Mac and Cheese with hidden vegetables…
Ingredients: ½ Medium sized cauliflower head, cut into small florets. 2 Large carrots, finely chopped. 250g diced radishes. 500g Gluten free macaroni pasta. 250g Haricot beans. 150mls unsweetened non-dairy milk. 50ml lemon juice.
2tbsn tomato puree. 2 tbsp. of soya butter.
Onion powder. Garlic Powder. Paprika. Mustard Powder. Pepper.
1. Place the vegetables, beans into a pan of boiling water. Cook until tender. Once cooked add the flavourings and the soya milk and blend until smooth. 2. Cook the macaroni pasta. 3. Mix together the blended mixture with the macaroni and place in the oven until golden.
