Mini Turkey Meatballs with Pasta and Tomato Sauce
Ingredients: For the meatballs: • 250g Lean Minced turkey. • ¼ finely chopped white onion • 2 tbsp. of Tomato puree • Pepper to season For the super hidden vegetable tomato sauce: • ¼ Finely chopped onions • ¼ Clove of garlic • ¼ Finely chopped leek • ¼ finely chopped carrot • 25g Closed cup or chestnut mushrooms • ¼ Courgette • ¼ Medium Aubergine • Tomato puree to taste • Dried Oregano to taste • 200g Tinned chopped tomatoes or pasta
Method: 1.
Preheat the oven to 160 C
2. Place all the vegetables, tomato puree, chopped tomatoes and pasta in a pan. 3. Season to taste. 4. Bring to the boil and simmer for 1hr. 5. Mix together the meatball mixture and make into 20 meatballs. 6. Place in the oven for 5-10 minutes 7. Add the meatballs to the sauce and cook for a further 30 minutes.
